Winter garden

About the subject

As gardeners, winter is the time to take a break from the busy summer months, but there are still tasks to be done in the garden, and the upcoming season needs to be prepared for. This is essential for having a successful and efficient season and getting the most out of your garden and the hours you spend in it.


In the Winter Garden course, we will discuss winter crops, extending the season, and plan the yearly cycle in the garden. We will also do practical work in the garden and greenhouse, so you can gain experience in what can be done in your own small self-sufficiency garden and small-scale production.


We strive to cultivate manually and apply regenerative and permaculture principles with a focus on building soil fertility. We will work with seed starting, preparing beds, making compost, and harvesting what’s available in the garden during the winter. Our focus is on creating and maintaining life in the soil, and we work organically. The vegetables we grow are used in the folk high school’s gold-certified organic kitchen.

Arendse Gulløv

Arendse is passionate about green transition and has worked with permaculture and regenerative agriculture for over 8 years.
She is a trained organic farmer from Norway and also holds a degree in environmental planning from RUC.
Arendse is deeply passionate about soil and micro-life, self-sufficiency, and climate transition. She has worked on a farm in Iceland and helped start two permaculture farm collectives in Norway and Denmark, where she worked full-time with farm operations, self-sufficiency, traditional crafts, and construction projects.

Lasse Willads Simonsen

Lasse Willads Simonsen

Lasse is a trained organic farmer and has worked professionally with crop production and vegetables, both manually and with machinery, for many years and in several places around the world. He has experience in most areas of organic production, ranging from cows and grains to market gardening.
